Their subtle flavor plays beautifully with just about anything and, unlike those mushy canned ones, fresh hearts of palm have a light, crunchy texture that stays firm when you roast, grill, fry, or bake them. This incredible versatility makes them perfect for pizzas, vegan ceviches, stir frys, appetizers, salads, sides and entrées.

Fresh hearts of palm are not only delicious and super versatile, they are also a nutritional powerhouse. They are the perfect low carb and low calorie vehicle for every kind of healthy diet. They are full of soluble and insoluble fiber, vitamins, minerals, and nutrients like iron and protein.

 

Sustainable Agriculture

We sustainably cultivate our fresh hearts of palm in Costa Rica. We have always strictly adhered to all fair trade and socially responsible best practices.

Hearts of palm are literally the heart, or core, of a young palm tree. We specifically use the Batris Gasipaes species of palm, more commonly known in English as Peach Palm and in Spanish as Pejibaye. It is a “multiple” palm, in the sense that it grows many stems from the main palm cluster. We cultivate them in a way where we allow for three generations of stems to continuously grow in a cycle. A small, medium, and a large stem are always growing from the palm. When the most mature stem is ready, we harvest it and then allow for a new baby stem to begin to grow. The next oldest stem will be ready for harvest in a few months, and the cycle continues.

If cultivated properly, one peach palm tree can keep producing hearts for 25-30 years. This is a big deal in the fight against slash-and-burn agriculture and in the effort to save our precious rain forests. Using fresh hearts of palm helps support this alternative crop and provides small farmers in Costa Rica an incentive to stop farming traditional staple crops that contribute to the vicious cycle of slash-and-burn agriculture.
